A project started by 4 friends with a mission to, "revive and put a new spin on the cider-making tradition in Burgundy. Designing and crafting distinctive ciders in Beaune, born from a blend of local apples and juices from other French regions, fermented and aged like grand cru wines in a collection of different wine and spirits barrels."
This 'eclectik' and singular approach provides an extensive selection of superb juices from dozens of apple varieties, from all around France with different flavours, from different terroirs.
These ciders are made as per the méthode traditionnelle (like in Champagne) by creating the perfect base of fermented apple juice, then creating the perfect blend before bottling. They are then bottled with a small addition of yeast and sugar and after a few months, a gentle fizz appears. All cuvees are extra brut with no dosage.
