Didier MONTCHOVET wines from Burgundy in Nantoux. Coming from a winemaking family, Didier Montchovet started making his own wines in 1984, starting his winery with 0.5 hectares. He already had strong beliefs in respecting the environment while making wine and used biodynamic methods in his vineyard and winemaking which has been certified biodynamic since 1984. Considered one of the pioneers in the area (literaly, it was the first biodynamic certified estate in Burgundy) Didier knew he wanted to work embracing the local terroirs in a cohesive work environment.
Traditional low vines plantings, planted on clay-limestone soils, planted in 1940 to 1987. The grapes are harvested by hand, the grapes are left for long gentle fermentation with plunging down, the wine is transferred to barrels for an 18 months ageing, and bottled by gravity. An amazing concentration in this complex wine, the Domaine is controlling the yields to 8 bunches per vines. This wine is powerful offering gourmet aromas of blackberries and hint of liquorice, round and tannic with a lot of freshness.
