Didier Montchovet is a passionate and dedicated winemaker, who started making wine in 1984 with 0.5 ha of vines, and was a precursor in using biodynamic methods. Later in 1989, Didier was able to lease 2.5 ha, and he is now producing on 9.2 ha near a village called Bouze les Beaunes (north west of Beaune) very elegant wines, driven by the terroir and expressing the true nature of the biodiversity of life surrounding the vineyards.
A classic Chardonnay from Burgundy with a tasteful use of oak. The time in oak barrel with lees stirring brings depth and complexity. The wine is rich and pulpy, yet with a great natural acidity to balance it all.
Light yellow, notes of lemon, brioche, fresh butter, wet stones and spices from the oak ageing.
Seafood or grilled chicken will be the perfect match.
