Guildford Vineyard is a 7 acre plot located in the far north west corner of the Macedon Ranges wine region. Planted by Mandy Jean and her late husband Brian Jean in 1994 they set out to explore regenerative farming through biodynamic & organic growing practices. The vines grow between stony ridges of slate, quartz and sandstone that slice through the landscape making it a unquie terroir.
In 2021 Chris Dilworth of Dilworth & Allain wines, took up the position of head winemaker and has set out to rejuvenise the brand making wines that are fresh and bright, full of fruit purity and that have an emphasis on drinkability.
2022 Guildford Vineyard Shiraz - Landsborough Vineyard
Taken from the Chapoutier Vineyard. The grapes were picked on the 27th of March. At the winery the grapes were all de-stemmed and fermentation commenced naturally in the days following. Throughout the fermentation pump overs and plunging were employed to extract flavours and tannin as the temperature increased we tend to do more plunging. In total the grapes remained on skins for 4 weeks. After this we basket pressed the grapes, to then transfer the wine to a stainless steel tank to settle and then to seasoned french oak. The wine remained in barrel maturing until January 2023. After this it was Racked and bottled in February 2023. Bottled unfined, unfiltered, with no other additives, other than a small amount of Sulphur Dioxide before bottling.
