Classic Chinon. 100% Cabernet Franc. Full of freshness and bright blue fruits with crunchy tannins.
Vines and Terroir: Old vines between 25-60 years old. They are early ripening grapes on a north facing slope. Chalky, altered limestone (5 to 40cm) on a tuffeau bedrock.
Harvest: Handpicked and hand sorted in the cellar.
Winemaking process: 50% destemmed 50% whole grapes (Beaujolais type), indigenous yeasts without Sulphur, unfiltered wine. We selected grapes (from old massal selections) with very lignified, allowing for semi-carbonic maceration without fear of extracting tannins from the stems.
Aging: Aged in concrete tanks for 6 months.
