100% Cabernet Franc all destemmed and aged in tanks. Aromatic, bright red fruits. Fun playful example of Cab Franc. Very more-ish!
Vines and Terroir: 35 year old vines. Quaternary aeolian sand with flint, sometimes on the surface, sometimes down to 1.5 meters deep. Le Pérou, the only parcel surrounded by woods, the plot benefits from an unique micro-climate (25 mm less rainfall compared to the plots in the neighbouring valley).
Harvest: Manual harvesting. Manual sorting of the grapes in the cellar, de-stemmed but not crushed, and put directly in the tank. Light soaking of the grapes.
Winemaking process: Destemmed, indigenous yeasts, sulfur-free vinification.
Aging: Aged in tank for 6 months.
