Classic Chinon. 100% Cabernet Franc. Full of bright blue fruit, delicate green tannins and juicy acidity.
Vines and Terroir: Old vines between 25-60 years old. They are early ripening grapes on a north facing slope. Chalky, altered limestone (5 to 40cm) on a tuffeau bedrock.
Harvest: Handpicked at night to start the fermentation at low temperature. Manual sorting of the grapes in the cellar, carbonic maceration and destemmed.
Winemaking process: Traditional with fine extraction of tannins using light pegging.
Aging: Aged in concrete tanks for 9 months + 5 months in bottle.
