Classic Chinon. 100% Cabernet Franc. Aromatic complexity, dark intensity of fruit with delicate, fine tannin structure.
Vines and Terroir: Old vines between 30-40 years old. Grown on a plateau of quartz and glaucous sands.
Harvest: Manual harvest at night to start the fermentation at low temperature, manual sorting of the grapes in the cellar, de-stemmed by hand and then gently foot pressed.
Winemaking process: Destemmed, indigenous yeasts, sulfur-free vinification.
Aging: Aged in Burgundian barrel for 18 months then 6 months in concrete tanks.
